Ingredients
- 2 tablespoons water
- 3 tablespoons ground flax seed, divided
- Parchment paper
- ¾ cup + 2 tablespoons pumpkin puree
- 5 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1 ½ cups old-fashioned oats
- ½ cup instant oats
- 2 tablespoons vanilla protein powder (optional)
- 2 teaspoons pumpkin (or apple) pie spice
- ¼ teaspoon kosher salt
- 1 cup dried cranberries
- ¼ cup chopped pecans (or walnuts)
Steps
- Preheat oven to 350°F. Combine water and 1 tablespoon flax seeds in medium bowl; let stand 10 minutes. Line baking sheet with parchment.
- Add pumpkin, syrup, and vanilla to flax mixture; mix well. Combine old-fashioned oats, instant oats, protein powder (if using), pie spice, salt, cranberries, pecans, and remaining 2 tablespoons flax seeds in large bowl. Stir pumpkin mixture into oat mixture until dough forms.
- Scoop (or form) dough into 12 (2-inch) balls; arrange on baking sheet 2 inches apart. Use fingers (or fork) to flatten slightly. Bake 15–20 minutes until lightly golden and centers are set. Let stand to cool completely on baking sheet before serving. Store in airtight container.
