Ingredients

  • ⅔ cup canola oil
  • 3 ripe plantains
  • ¼ cup coconut sugar

Steps

    1. Preheat oil in large sauté pan on medium 2–3 minutes. Cut off ends of plantains and remove skin. Cut plantains in half, then cut each piece in half lengthwise; coat with sugar.
    2. Fry plantains (in batches) 2–3 minutes on each side until golden. Remove from pan and drain on paper towels; serve warm.
