Ingredients

  • 1 medium banana
  • 6 cups frozen pineapple chunks (+ more, optional for garnish)
  • 2 cups coconut water
  • ½ cup canned lite coconut milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • Toasted coconut flakes (optional for garnish)

Steps

    1. Peel banana. Place in blender in this order: banana, pineapples, coconut water, coconut milk, vanilla, and salt. Blend until smooth.
    2. Divide pineapple mixture among serving glasses. Garnish with additional pineapple chunks, pineapple leaves, and toasted coconut flakes, if desired.
