Pecan Pie

Ingredients
  • 1 (9-inch) frozen prepared piecrust
  • Parchment paper
  • ¾ cup light corn syrup
  • 1 ½ cups packed dark brown sugar
  • ¼ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons apple cider vinegar
  • 3 large eggs
  • 3 ½ cups pecan pieces
Steps
  1. Preheat oven to 325°F. Arrange pie shell on parchment-lined baking sheet; set aside.
  2. Combine in medium saucepot: corn syrup, dark brown sugar, butter, vanilla extract and apple cider vinegar until blended. Bring to boil on medium; cook, stirring occasionally, until sugar has dissolved.
  3. Pour mixture into a large stainless-steel bowl, whisk mixture occasionally until cooled to room temperature (CAUTION: bowl will be hot). Whisk in eggs, one at a time, until well blended. Stir in pecan pieces, then pour filling into prepared pie shell. Bake 25–30 minutes or until set.
  4. Remove from oven and set aside to cool completely before serving.
