Ingredients
- 6 pitted dried dates, coarsely chopped
- ½ cup chia seeds
- 2 cups unsweetened vanilla soy milk
- 2 tablespoons peanut butter powder
- 2 tablespoons agave nectar
- 1 medium banana, coarsely chopped
- 1 cup puffed rice cereal
- 4 teaspoons pecan pieces
Steps
- Chop dates and place in medium bowl; stir in chia seeds and milk. Chill 4 hours (or overnight), stirring after 2 hours.
- Pour chia mixture into blender with peanut butter powder and agave; blend until thick and smooth.
- Chop banana. Divide one-half of the chia mixture into 4 serving dishes; top each with 2 tablespoons banana and 2 tablespoons puffed rice. Repeat layers. Top each pudding with 1 teaspoon pecans. Serve.
