Peanut Butter-Banana Chia Pudding

    • 6 pitted dried dates, coarsely chopped
    • ½ cup chia seeds
    • 2 cups unsweetened vanilla soy milk
    • 2 tablespoons peanut butter powder
    • 2 tablespoons agave nectar
    • 1 medium banana, coarsely chopped
    • 1 cup puffed rice cereal
    • 4 teaspoons pecan pieces

    Steps

      1. Chop dates and place in medium bowl; stir in chia seeds and milk. Chill 4 hours (or overnight), stirring after 2 hours.
      2. Pour chia mixture into blender with peanut butter powder and agave; blend until thick and smooth.
      3. Chop banana. Divide one-half of the chia mixture into 4 serving dishes; top each with 2 tablespoons banana and 2 tablespoons puffed rice. Repeat layers. Top each pudding with 1 teaspoon pecans. Serve.
