Ingredients

  • 1 ripe peach
  • 2 fresh mint leaves
  • 1 teaspoon ginger stir-in paste
  • ½ oz simple syrup
  • 2 oz rum
  • 1 lemon, for juice/garnish
  • 4 oz club soda

Steps

    1. Pit peach and cut into 8 wedges. Muddle 2 peach wedges, mint, and ginger paste in cocktail shaker.
    2. Add ice, simple syrup, and rum. Shake well and strain into an ice-filled Collins glass.
    3. Juice one-half lemon (1 tablespoon). Top drink with club soda and lemon juice. Garnish with peach wedges and lemon slices, if desired.
