Ingredients
- 1 ripe peach
- 2 fresh mint leaves
- 1 teaspoon ginger stir-in paste
- ½ oz simple syrup
- 2 oz rum
- 1 lemon, for juice/garnish
- 4 oz club soda
Steps
- Pit peach and cut into 8 wedges. Muddle 2 peach wedges, mint, and ginger paste in cocktail shaker.
- Add ice, simple syrup, and rum. Shake well and strain into an ice-filled Collins glass.
- Juice one-half lemon (1 tablespoon). Top drink with club soda and lemon juice. Garnish with peach wedges and lemon slices, if desired.
Other Preparation Methods
Make it sweeter.
Add fresh fruit and substitute ginger ale for the club soda.
