Oven-Baked Pork Chops with Savory Black-Eyed Peas

Oven-Baked Pork Chops

Ingredients

  • Cooking spray
  • ¼ cup egg substitute (or 1 large egg)
  • 1 box seasoned coating for pork (5–6 oz)
  • 1 ½ lb center-cut pork loin chops
  • ⅛ teaspoon pepper

Steps

    1. Preheat oven to 425°F. Coat baking sheet with spray. Beat egg in shallow bowl and place pork coating in second shallow bowl.
    2. Sprinkle both sides of pork chops with pepper. Dip pork chops in egg (coating both sides) and allow excess to drip off, then coat both sides with pork coating, pressing with fingers to coat evenly. Arrange pork chops on baking sheet (wash hands).
    3. Bake 20 minutes or until golden and 145°F; serve.

Savory Black-Eyed Peas

Ingredients

  • 2 (15.8 oz) cans black-eyed peas
  • 1 tablespoon cooked bacon pieces
  • ⅛ teaspoon pepper

Steps

    1. Combine all ingredients in medium saucepan (do not drain peas).
    2. Heat on medium 15 minutes, stirring occasionally, or until thoroughly heated; serve.

Serving Suggestions

  • Complete your meal with boil-in-bag rice, seasoned cooked greens, tomato wedges, cornbread, and lemon crème cake for dessert.
  • If preparing rice, begin cooking after black-eyed peas are started. Combine both with a shot of hot pepper sauce for a quick version of “Hoppin’ John.”
