Ingredients
- ½ seedless cucumber
- 1 yellow bell pepper
- ⅓ bunch fresh cilantro
- ¼ fresh jalapeño pepper
- 2 cups frozen peaches
- 1 clove garlic
- ½ teaspoon kosher salt
- 1 tablespoon apple cider vinegar
- ¼ cup crumbled goat cheese
- ½ cup lite coconut milk
- 1 scoop vanilla whey protein powder
- ½ cup cold water (or until desired consistency)
Steps
- Chop cucumber (½ cup), bell pepper (½ cup), and cilantro (⅓ cup) coarsely. Chop jalapeño finely, if using, discarding seeds and membranes.
- Combine all ingredients in blender (or food processor); blend until smooth (or desired consistency). Chill until ready to serve.
