Old Fashioned Oatmeal Cookies

Ingredients

  • 1 cup packed brown sugar
  • ½ cup sugar
  • ¾ cup vegetable shortening
  • ¼ cup water
  • 1 large egg (or ¼ cup egg substitute)
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned oats
  • 1 cup flour
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt (optional)

Steps

    1. Preheat oven to 350°F. Lightly coat cookie sheet(s) with spray.
    2. Add to large bowl: both sugars, shortening, water, egg, and vanilla; beat with hand mixer until creamy. Combine in separate large bowl: oats, flour, baking soda, and 1 teaspoon salt (if desired).
    3. Add oats mixture to shortening mixture; mix well. Drop by rounded tablespoons onto prepared cookie sheet(s), about 2 inches apart.
    4. Bake 12–14 minutes, until light golden brown. Let stand 1 minute before removing cookies to racks to cool. Makes 6 dozen.
Other Preparation Methods

    VARIATIONS

    • CHUNKY OATMEAL COOKIES: Stir in 1 cup of any of the following with oats: semi-sweet chocolate chips, raisins, chopped walnuts, chopped dates, or shredded coconut.
    • CINNAMON SPICE OATMEAL COOKIES: Add 1 teaspoon ground cinnamon, and ½ teaspoon ground nutmeg to flour mixture.
