12 servings
about 1 hour total (Active 30 minutes)

Ingredients

  • 4 cups water
  • 4 tablespoons white vinegar
  • 4 cups red cabbage (for blue dye), coarsely chopped
  • 12 hard-boiled eggs

Steps

    1. Bring water and vinegar to a boil. Chop cabbage.
    2. Stir cabbage into boiling water. Reduce heat to medium-low; simmer 15 minutes. Strain liquid into large bowl; chill 30 minutes or until completely cooled (vegetables can be eaten or discarded).
    3. Place dye in tall glass (or keep in large bowl); add eggs and submerge completely. Let stand 15–20 minutes (or overnight) to develop depth of color desired. Let air dry.
NOTE: White eggs will turn blue; brown eggs will turn green.
Pink/Red: Prepare dye using 4 cups chopped fresh beets instead of cabbage.
Yellow: Prepare dye using 4 tablespoons ground turmeric instead of cabbage.
Gold: Prepare dye using 2 (0.5-oz) packages saffron threads instead of cabbage.
Tan/Brown: Prepare dye using 4 tablespoons instant coffee instead of cabbage.
