Moroccan-Style Quinoa Salad with Chickenless Tenders

Ingredients

  • 1 (10 oz) package GreenWise frozen quinoa with squash
  • 1 (8 oz) package GreenWise frozen chickenless tenders
  • 4 oz whole pitted dates (about 6)
  • ½ cup GreenWise raw cashews
  • 1 cup GreenWise canned low-sodium garbanzo beans
  • ⅓ cup lemon vinaigrette
  • 1 tablespoon GreenWise almond butter (or tahini)
  • 1 ½ teaspoons curry powder
  • ¼ teaspoon GreenWise ground cinnamon
  • ¼ teaspoon ground red pepper
  • 1 cup GreenWise matchstick carrots
  • 4 cups GreenWise baby spinach

Steps

    1. Microwave quinoa and tenders following package instructions.
    2. Meanwhile, chop dates and cashews; drain and rinse garbanzo beans.
    3. Combine vinaigrette, almond butter, curry powder, cinnamon, and red pepper in large bowl; whisk to blend. Add quinoa, carrots, dates, spinach, chickpeas, and cashews to dressing; toss to coat. Serve tenders over salad.
