Mom's Meatloaf
Ingredients
  • Cooking spray
  • 20 round butter crackers
  • Large zip-top bag
  • 1 lb lean ground beef (7% fat)
  • 1 cup frozen seasoning blend (onions, bell peppers, celery, and parsley)
  • ½ cup reduced-fat milk
  • 2 large eggs (or ½ cup egg substitute)
  • 1 teaspoon meat seasoning
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon pepper
  • ¼ cup ketchup
  • ¼ cup maple syrup
Steps
    1. Preheat oven to 375°F. Coat 9- x 4-inch loaf pan with spray. Place crackers in bag and crush finely.
    2. Combine crackers, beef, seasoning blend, milk, eggs, seasoning, salt, and pepper in medium bowl, mixing just until combined (do not over-mix). Shape into loaf and place in pan (wash hands). Bake 40–45 minutes until meat is 165°F.
    3. Combine ketchup and syrup in small bowl and pour over meatloaf 5 minutes before bake time is complete. Let stand 5 minutes; slice and serve.
Creamy Potatoes
Ingredients
  • 2 cups water
  • ½ cup reduced-fat milk
  • 2 tablespoons garlic-herb butter
  • 1 (4.7 oz) box au gratin potato mix
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon pepper
Steps
    1. Place water, milk, and butter in medium saucepan and bring to a boil.
    2. Stir potatoes, seasoning from potatoes, salt, and pepper into pan. Reduce heat to medium-low, cover, and simmer 20 minutes, stirring occasionally.
    3. Remove from heat; let stand 5 minutes. Serve.
Green Beans with Tomatoes
Ingredients
  • 1 (15 oz) bag frozen green beans
  • 1 (14.5 oz) can diced tomatoes with basil, garlic, and oregano
  • 1 teaspoon seasoned salt
Steps
    1. Combine all ingredients in microwave-safe bowl.
    2. Cover and microwave on HIGH 10 minutes, stirring halfway through cook time. Stir and serve.
Serving Suggestions
  • Complete your meal with applesauce, rye bread, and cherry pie for dessert.
  • Shortcuts and Tips:
    Use residual heat in the oven to warm your cherry pie. Remove plastic cover and place pie in the oven after turning it off; the pie will be toasty warm when you finish your meal.
