Mom's Meatloaf

Ingredients

  • Cooking spray
  • 20 round butter crackers
  • Large zip-top bag
  • 1 lb lean ground beef (7% fat)
  • 1 cup frozen seasoning blend (onions, bell peppers, celery, and parsley)
  • ½ cup reduced-fat milk
  • 2 large eggs (or ½ cup egg substitute)
  • 1 teaspoon meat seasoning
  • ¼ teaspoon kosher salt
  • ⅛ teaspoon pepper
  • ¼ cup ketchup
  • ¼ cup maple syrup

Steps

    1. Preheat oven to 375°F. Coat 9- x 4-inch loaf pan with spray. Place crackers in bag and crush finely.
    2. Combine crackers, beef, seasoning blend, milk, eggs, seasoning, salt, and pepper in medium bowl, mixing just until combined (do not over-mix). Shape into loaf and place in pan (wash hands). Bake 40–45 minutes until meat is 165°F.
    3. Combine ketchup and syrup in small bowl and pour over meatloaf 5 minutes before bake time is complete. Let stand 5 minutes; slice and serve.
