Ingredients
- Cooking spray
- 20 round butter crackers
- Large zip-top bag
- 1 lb lean ground beef (7% fat)
- 1 cup frozen seasoning blend (onions, bell peppers, celery, and parsley)
- ½ cup reduced-fat milk
- 2 large eggs (or ½ cup egg substitute)
- 1 teaspoon meat seasoning
- ¼ teaspoon kosher salt
- ⅛ teaspoon pepper
- ¼ cup ketchup
- ¼ cup maple syrup
Steps
- Preheat oven to 375°F. Coat 9- x 4-inch loaf pan with spray. Place crackers in bag and crush finely.
- Combine crackers, beef, seasoning blend, milk, eggs, seasoning, salt, and pepper in medium bowl, mixing just until combined (do not over-mix). Shape into loaf and place in pan (wash hands). Bake 40–45 minutes until meat is 165°F.
- Combine ketchup and syrup in small bowl and pour over meatloaf 5 minutes before bake time is complete. Let stand 5 minutes; slice and serve.
