    Ingredients

    • 4 (6 oz) cobia fillets, skin removed (about 1 ½ lb)
    • 2 lemons, for juice
    • 1 clove garlic
    • ¼ cup olive oil
    • 1 teaspoon dry mustard
    • ½ teaspoon kosher salt
    • ¼ teaspoon pepper
    • Mango salsa (optional for serving)

    Steps

      1. Place fish in baking dish (wash hands). Juice lemons (¼ cup); mince garlic. Combine juice and garlic with remaining ingredients (except salsa); pour over fish and let stand 10 minutes to marinate. Preheat grill (or grill pan) on medium.
      2. Place fish on grill (discard marinade); grill 6–7 minutes on each side until center of fish flakes easily and is 145°F. Serve with salsa, if using.
      Always check fish for bones.
    Other Preparation Methods
      • Bake: Preheat oven to 375°F. Coat 4 (6 oz) cobia fillets with ¼ cup melted butter. Combine ½ cup each Italian-style bread crumbs and Parmesan cheese; top cobia evenly with mixture. Bake 12–15 minutes until fish separates easily and is 145°F.
