Manchego, Apple, and Almond Salad

Ingredients

  • 5 oz Publix Deli Manchego cheese
  • 2 medium, tart apples
  • ¼ cup smoked almonds
  • 1 lemon, for juice
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • 4 cups baby arugula

Steps

    1. Remove rind from Manchego, then cut cheese into 3-inch-long matchsticks (about 1 ½ cups) and place in medium bowl. Core apples and slice thinly, then cut into 3-inch-long matchsticks. Chop almonds coarsely. Juice lemon (2 tablespoons).
    2. Stir apples and almonds into bowl with cheese; add oil, lemon juice, and salt, then toss to coat. Place 1 cup arugula on each plate and top evenly with cheese-apple mixture. Serve.
Other Preparation Methods

    • Appetizer: Top hot potato wedges with shredded Publix Deli Manchego cheese; sliced green onions; cooked, crumbled chorizo; and a drizzle of spicy ketchup for loaded, Spanish-style patatas bravas.
    • Breakfast: Fry 1 large egg in olive oil; place on toasted bread. Dollop egg with harissa and sprinkle with shredded Publix Deli Manchego cheese.
