Low Country Shrimp Boil

Ingredients

  • 2 quarts water
  • ⅓ cup seafood seasoning (+ more, optional for serving)
  • 1 ½ lb petite red potatoes
  • 4 ears fresh corn
  • 2 lemons, for wedges (optional)
  • 7 oz polska kielbasa (or smoked sausage)
  • 1 ½ lb unpeeled, extra-large shrimp

Steps

    1. Combine water and seasoning in large stockpot; bring to a boil. Cut potatoes in half and stir into boiling water; simmer 13 minutes. Remove husks and silks from corn; cut ears into thirds.
    2. Add corn to pot; simmer 10 minutes. Cut lemons into wedges, if using; cut kielbasa into 1-inch-thick pieces (wash hands).
    3. Add kielbasa and shrimp to pot; cook 4 minutes until kielbasa is 160°F and shrimp are pink and opaque. Drain mixture thoroughly and transfer to large serving bowl or platter. Top with lemons and a sprinkle of additional seasoning, if using. Serve.
