    Ingredients

    • 1 lemon, for zest/juice
    • 1 tablespoon fresh rosemary, finely chopped
    • 1 tablespoon fresh chives, finely chopped
    • ½ teaspoon pepper
    • ¼ teaspoon kosher salt
    • 1 ¼ lb fresh salmon fillets, skin on
    • 1 tablespoon honey
    • 1 tablespoon olive oil

    Steps

      1. Preheat grill on medium. Zest/grate lemon peel (no white; 2 teaspoons). Reserve lemon. Chop rosemary and chives. Combine zest, rosemary, chives, pepper, and salt in a small bowl. Place salmon, skin side down, in a shallow dish (wash hands). Drizzle with honey and oil; sprinkle with zest mixture. Allow to marinate 10 minutes (or 1 hour).
      2. Carefully arrange salmon, skin side down, on grill. Spoon any remaining marinade over salmon.
      3. Cover and grill for 20–25 minutes or just until salmon is opaque and 145°F. Place salmon on serving platter. Squeeze remaining lemon juice over salmon before serving.
