Late Night Cheeseburgers

Ingredients

  • 2 cups 3-color coleslaw mix
  • ¼ cup lemon vinaigrette
  • ½ teaspoon kosher salt
  • ½ cup roasted red peppers, coarsely chopped
  • 1 ½ lb ground beef chuck
  • 1 cup shredded cheddar cheese
  • ½ cup french-fried onions
  • Cooking spray
  • ½ cup sweet and spicy barbecue sauce
  • 4 hamburger buns

Steps

    1. Preheat grill (or grill pan). Combine coleslaw, vinaigrette, and salt until blended; set aside. Chop peppers.
    2. Combine ground beef, cheese, onions, and peppers until blended. Form meat into four patties (wash hands). Coat patties on both sides with spray and place on grill; grill 4–5 minutes on each side and until burgers are 160°F.
    3. Spread 2 tablespoons barbecue sauce on inside of bun halves. Place burgers on bottom halves of buns; top each with ½ cup coleslaw and top half of bun. Serve.
