Lamb Smash Burger Slider with Garlic-Herb Mayonnaise and Oven-Dried Tomatoes

Ingredients

    • For tomatoes
    • 3 plum tomatoes
    • ½ teaspoon fresh thyme
    • 1 tablespoon extra-virgin olive oil
    • ¼ teaspoon kosher salt
    • ⅛ teaspoon fresh cracked black pepper
    • Parchment paper
    • For garlic-herb mayo
    • 1 tablespoon fresh chives
    • 4 sprigs fresh Italian parsley
    • 2 cloves Spice World Fresh Peeled Garlic
    • ¼ teaspoon kosher salt
    • ½ cup mayonnaise
    • 1 teaspoon sherry vinegar
    • For burgers
    • 1 lb Thomas Farms Ground Lamb
    • ½ teaspoon kosher salt
    • ¼ teaspoon fresh cracked black pepper
    • 3 oz shallots
    • 3 slices Land O Lakes Sliced Muenster Cheese
    • 6 slider buns

    Steps

      1. Preheat oven to 250°F. Halve tomatoes; remove thyme leaves from stems. Add to medium bowl: tomatoes, oil, ¼ teaspoon salt, ⅛ teaspoon pepper, and thyme leaves. Toss to coat well; transfer to parchment-lined baking sheet. Bake 2 ½–3 hours until mostly dehydrated.
      2. Meanwhile, prepare mayo. Thinly slice chives; finely chop parsley (1 tablespoon). Smash garlic then finely chop; add to medium bowl with ¼ teaspoon salt and mash into a paste. Add to garlic paste: chives, parsley, mayonnaise, and vinegar. Mix well until blended; chill until ready to serve.
      3. Combine lamb with remaining ½ teaspoon salt, and remaining ¼ teaspoon pepper until just blended. Form lamb mixture into 6 even balls (about 2.5 oz each); wash hands and set aside.
      4. Finely chop shallots. Cut cheese slices in half. Preheat large griddle (or cast iron skillet) on medium 5 minutes. Place lamb on griddle; cook 1 minute, then press down with metal spatula into very thin patties. Continue cooking 2–3 minutes until caramelized. Turn lamb patties over and continue cooking 2 more minutes until 160°F. Evenly top burgers with one-half shallots and cheese; cook until melted.
      5. To serve, toast buns on griddle (if desired). Spread 1 teaspoon mayonnaise mixture on both sides of bun. Place 1 patty on bottom of each bun. Top with 1 tomato half and 1 teaspoon remaining shallots; serve.
