Ingredients
- Nonstick aluminum foil
- 1 tablespoon dried sage
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon kosher salt
- ¼ teaspoon ground cloves
- ¼ teaspoon crushed red pepper
- 4 lamb loin chops, cut 1 ½-2 inches thick (about 1 pound)
- 2 cups grape tomatoes
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
Steps
- Preheat broiler. Line a baking sheet with foil. Combine sage, garlic powder, paprika, salt, cloves and crushed red pepper. Rub chops with the spice mixture. Place chops on one half of the prepared pan.
- Broil chops 4 to 5 inches from the heat for 10 minutes. Turn chops; add tomatoes to the other half of the baking sheet. Drizzle tomatoes with olive oil. Broil for about 5 minutes more or until lamb reaches 145°F and tomatoes are just tender. Drizzle vinegar over tomatoes. Serve lamb chops with tomatoes.
