Kitchen Sink Cookie Bars with Chocolate Ganache

Ingredients

  • ½ cup unsalted butter
  • Nonstick aluminum foil
  • 1 (17.5 oz) package chocolate chip cookie mix
  • 1 large egg (or ¼ cup egg substitute)
  • ¾ cup toasted, finely chopped pecans
  • ¾ cup mini pretzels
  • ¾ cup crisp rice cereal
  • ¾ cup mini marshmallows
  • ½ cup unsweetened vanilla almond milk
  • 1 ¼ cups mini semisweet chocolate morsels

Steps

    1. Set butter out to soften. Preheat oven to 350°F. Line 9-inch square baking dish with foil. Prepare cookie mix following package instructions (using listed butter and egg). Combine pecans, pretzels, cereal, and marshmallows until blended. Add 2 cups mixture to cookie dough; knead until blended. Reserve remaining mixture (about 1 cup) for topping.
    2. Press dough evenly into baking dish. Bake 18–22 minutes until edges are golden and center is set. Remove from oven and let stand 30 minutes to cool.
    3. Meanwhile, place almond milk in medium, microwave-safe bowl; microwave on HIGH 1–2 minutes until steaming. Add chocolate morsels; let stand 5 minutes without stirring, then stir until smooth.
    4. Pour chocolate ganache over cooled brownies, then sprinkle with reserved topping mixture. Chill 2 hours (or overnight). Cut into 16 squares; serve.
