Ingredients

  • 1 tablespoon ghee (clarified butter)
  • ½ cup basmati rice
  • 4 cups whole milk
  • ½ teaspoon kosher salt
  • ½ teaspoon ground cardamom
  • 1 cinnamon stick
  • ½ cup granulated sugar
  • ½ cup roasted, shelled pistachios
  • 6 large, pitted dates

Steps

    1. Heat ghee in large saucepan on medium 2–3 minutes. Add rice to pan; cook and stir 2 minutes or until toasted.
    2. Reduce heat to low. Stir in milk, salt, cardamom, and cinnamon stick. Bring to a simmer; simmer 18–20 minutes, stirring occasionally, until rice is tender and mixture has thickened. Stir in sugar; cook 4–5 more minutes, stirring occasionally, until sugar is dissolved. Remove from heat; let stand to cool 5 minutes.
    3. Meanwhile, chop pistachios finely and chop dates coarsely. Divide rice mixture among serving bowls. Garnish with pistachios and dates; serve.
