Ingredients
- 6 cloves garlic
- 1 shallot
- ¼ bunch fresh cilantro
- 3 tablespoons lightly salted peanuts
- 2 lb boneless, skinless chicken thighs
- 8 (6-inch) wooden skewers
- ¼ cup reduced-sodium soy sauce
- ¼ cup honey
- ¼ cup Key lime juice
- ½ teaspoon kosher salt
- 1 teaspoon pepper
- Cooking spray
- 2 tablespoons crunchy (or creamy) peanut butter
Steps
- Chop garlic and shallot finely. Chop cilantro (¼ cup) and peanuts coarsely. Cut chicken into 1-inch chunks and thread onto skewers (wash hands).
- Combine in shallow dish: soy sauce, honey, lime juice, garlic, shallots, salt, and pepper. Whisk to blend; reserve ¼ cup, then coat chicken skewers with remaining marinade. Let stand to marinate 30 minutes (or chill overnight).
- Preheat grill (or grill pan) on medium. Remove skewers from marinade (discard marinade) and coat with spray. Arrange on grill; grill 8–10 minutes, turning occasionally, until chicken is grill-marked and 165°F. Arrange skewers on serving platter. Whisk peanut butter and reserved ¼ cup marinade until blended. Drizzle skewers with mixture, then sprinkle with cilantro and peanuts. Serve.
