Key Lime-Peanut Grilled Chicken Skewers

Ingredients

  • 6 cloves garlic
  • 1 shallot
  • ¼ bunch fresh cilantro
  • 3 tablespoons lightly salted peanuts
  • 2 lb boneless, skinless chicken thighs
  • 8 (6-inch) wooden skewers
  • ¼ cup reduced-sodium soy sauce
  • ¼ cup honey
  • ¼ cup Key lime juice
  • ½ teaspoon kosher salt
  • 1 teaspoon pepper
  • Cooking spray
  • 2 tablespoons crunchy (or creamy) peanut butter

Steps

    1. Chop garlic and shallot finely. Chop cilantro (¼ cup) and peanuts coarsely. Cut chicken into 1-inch chunks and thread onto skewers (wash hands).
    2. Combine in shallow dish: soy sauce, honey, lime juice, garlic, shallots, salt, and pepper. Whisk to blend; reserve ¼ cup, then coat chicken skewers with remaining marinade. Let stand to marinate 30 minutes (or chill overnight).
    3. Preheat grill (or grill pan) on medium. Remove skewers from marinade (discard marinade) and coat with spray. Arrange on grill; grill 8–10 minutes, turning occasionally, until chicken is grill-marked and 165°F. Arrange skewers on serving platter. Whisk peanut butter and reserved ¼ cup marinade until blended. Drizzle skewers with mixture, then sprinkle with cilantro and peanuts. Serve.
