Ingredients
- 2 tablespoons water
- 6 tablespoons Key Lime juice
- ½ cup sugar
- 2 tablespoons ginger spice paste
- 1 lime, for wedges
- 24 oz ginger ale, chilled
- 4 sprigs fresh mint, divided
- Cubed ice
Steps
- Place water, lime juice, sugar, and ginger paste in small saucepan on medium. Bring to a simmer; simmer 2–3 minutes or until sugar has dissolved. Remove from heat. Let stand 5 minutes, strain, and allow to cool completely.
- Cut lime into 4 wedges. Fill 4 mugs with ice. Divide ginger syrup evenly among mugs and top with ginger ale; stir gently. Garnish with lime wedges and mint sprigs.
