Kentucky-Style Beer Cheese Dip

Ingredients

  • 8 oz extra-sharp white cheddar cheese
  • 8 oz extra-sharp yellow cheddar cheese
  • 4 oz cream cheese
  • ¼ cup unsalted butter
  • ⅔ cup diced fresh yellow onions
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground red pepper
  • ½ cup dark beer
  • Pretzel rods (optional for serving)
  • Carrot sticks (optional for serving)
  • Celery sticks (optional for serving)

Steps

    1. Cut cheeses and butter into small cubes and let come to room temperature, then place in food processor bowl and process until combined.
    2. Add onions, Worcestershire sauce, mustard, salt, and red pepper. Process until combined.
    3. Pour beer in slowly, with processor running, until mixture is blended and smooth. Place in serving bowl. Serve with pretzel rods, carrot sticks, and celery sticks, if using.
