Kale, Red Cabbage, and Apple Slaw

Ingredients
  • 1 orange, for zest/juice
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon chopped dates
  • 1 tablespoon coarse Dijon mustard
  • ⅛ teaspoon black pepper
  • 2 cups kale leaves, chopped
  • 1 ½ cups red cabbage, chopped
  • 2 small Granny Smith apples, cored and chopped
Steps
  1. Zest/grate orange (½ teaspoon); squeeze orange for juice (2 tablespoons). Whisk in large bowl: orange zest, juice, vinegar, dates, mustard, and black pepper until blended.
  2. Chop kale, cabbage, and apples into small pieces. Add kale, cabbage, and apples to dressing; toss until evenly coated. Cover and chill 2 hours (or overnight). Serve.
