Kale, Chicken, and Apple Salad

Ingredients

  • 3 cups chopped fresh kale
  • 3 tablespoons lemon juice
  • ½ teaspoon kosher salt
  • 1 medium carrot
  • 1 medium, sweet apple
  • 2 cups sliced (or shredded) cooked chicken (10–12 oz)
  • 3 tablespoons reduced-fat mayonnaise
  • ½ teaspoon Dijon mustard
  • ¼ cup sliced fresh green onions

Steps

    1. Remove and discard any stem pieces from kale. Chop leaves coarsely and place in large bowl; drizzle with lemon juice and sprinkle with salt. Use hands to massage kale mixture 30 seconds or until slightly softened; set aside.
    2. Peel carrot, then shred using box grater. Core apple; chop apple and chicken coarsely. Combine mayonnaise and mustard.
    3. Add carrots, apples, onions, and chicken to kale mixture; stir in mayonnaise mixture until thoroughly combined. Serve.
