Jamaican-Style Mac and Cheese

Ingredients

  • 1 medium yellow onion
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 8 oz elbow macaroni noodles
  • 3 large eggs
  • 1 cup half-and-half
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 4 cups shredded cheddar cheese
  • Cooking spray
  • 1 habanero pepper

Steps

    1. Bring water to a boil for macaroni. Chop onion finely. Stir onions, salt, pepper, and macaroni into boiling water; cook following macaroni package instructions, then drain thoroughly.
    2. Preheat oven to 350°F. Whisk eggs, half-and-half, mustard, and Worcestershire sauce in large bowl until blended. Add macaroni mixture and cheese to egg mixture; stir until combined.
    3. Coat 9-inch square baking dish with spray. Transfer mac and cheese to dish; bake 20 minutes. Press whole pepper in center of mac and cheese (or chop finely and sprinkle over top); bake 15 more minutes. Serve.
