Jamaican-Style Fruit Cake

Ingredients

  • 1 lime, for zest
  • ½ cup golden raisins
  • ½ cup prunes
  • ½ cup dried cherries
  • ¼ cup raisins
  • ½ cup dark rum
  • ½ cup sweet red wine
  • ½ cup unsalted butter
  • Cooking spray
  • 1 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground allspice
  • ½ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 3 tablespoons molasses
  • 2 tablespoons browning sauce

Steps

    1. Zest lime (1 teaspoon). Chop dried fruits coarsely. Place in bowl: fruits, lime zest, rum, and wine. Stir to combine; cover and let stand overnight (or up to 2 days).
    2. Set butter in large bowl to soften. Preheat oven to 325°F. Coat 9-inch round cake pan with spray. Pour fruit mixture into blender and blend until smooth. Combine flour, baking powder, nutmeg, cinnamon, and allspice in medium bowl.
    3. Add sugar to butter. Beat with electric mixer on HIGH until pale yellow and fluffy. Beat in eggs, 1 at a time, until blended. Beat in vanilla extract, almond extract, molasses, and browning sauce until blended. Stir in flour mixture just until batter forms, then pour in fruit mixture, stirring until blended. Pour batter into cake pan.
    4. Bake 45–50 minutes until toothpick inserted in center comes out clean. Let cake cool completely in pan before removing. Serve.
