Jamaican-Style Beef Patties

Ingredients

  • ¼ cup + 2 tablespoons margarine, divided
  • 2 cups all-purpose flour (+ more for dusting)
  • 2 ½ teaspoons curry powder, divided
  • 1 ¼ teaspoons kosher salt, divided
  • ¼ cup shortening
  • ⅓ cup water
  • 1 small yellow onion
  • 1 lb lean ground beef
  • 1 teaspoon dried thyme
  • 1 teaspoon pepper
  • ½ cup beef broth
  • ½ cup plain breadcrumbs
  • 1 large egg

Steps

    1. Prepare dough. Set margarine out to soften. Place flour, 1 ½ teaspoons curry powder, and ¼ teaspoon salt in bowl of stand mixer. Mix with paddle attachment until combined. Add shortening and ¼ cup margarine; continue mixing on LOW until mixture resembles coarse crumbs. Add water and stir just until dough forms (do not overmix or crust will become tough). Shape dough into log, cut into 10 equal portions, and set aside.
    2. Prepare filling. Chop onion finely. Melt remaining 2 tablespoons margarine in medium sauté pan on medium. Add onions; cook and stir 3–4 minutes until onions are soft and translucent. Add beef, thyme, pepper, and remaining 1 teaspoon each curry powder and salt; cook 5–7 minutes, stirring to crumble meat, until no pink remains and beef is 160°F.
    3. Preheat oven to 375°F. Stir broth and breadcrumbs into beef mixture; simmer until liquid is absorbed, then remove pan from heat and let stand to cool.
    4. Dust work surface lightly with flour and roll each dough portion into 6-inch-wide, ⅛-inch-thick circle. Spoon filling evenly onto half of each dough circle. Fold edges over filling and press together to seal, making half-moon–shaped patties. Beat egg, then brush evenly on tops of patties. Bake 25–30 minutes until crust is golden. Serve.
