Island-Spiced Sweet Potatoes

Ingredients

  • 3 lb sweet potatoes
  • 3 tablespoons coconut oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ¾ teaspoon kosher salt
  • 1 tablespoon Pickapeppa sauce

Steps

    1. Preheat oven to 400°F. Peel potatoes, then cut into 1-inch-thick rounds.
    2. Place potatoes and coconut oil in large bowl; toss until potatoes are evenly coated. Add remaining ingredients and toss again until coated.
    3. Arrange potatoes in single layer on nonstick baking sheet; bake 30 minutes. Flip potatoes and bake 10 more minutes or until fork-tender. Serve.
