Ice Cube Tray Sushi

Ingredients

  • 1 cup sushi (or short grain) rice
  • 1 ¼ cups water
  • 1 teaspoon kosher salt
  • 2 tablespoons seasoned rice vinegar
  • ½ seedless cucumber
  • 8 oz chilled chicken tenders (or nuggets)
  • ⅓ cup yum yum sauce (or spicy mayonnaise)
  • 1 tablespoon sesame oil
  • 2 tablespoons sesame seeds
  • Reduced-sodium soy sauce (optional for serving)

Steps

    1. Cook rice following package instructions (using water and salt). Stir vinegar into rice; chill 10 minutes or until cool.
    2. Peel cucumber and chop finely (1 cup). Chop chicken finely and toss with yum yum sauce.
    3. Coat cups of 2 (12-well) ice cube trays with oil. Place 1 heaping teaspoon rice in each cup, pressing in firmly.
    4. Top rice evenly with cucumber and chicken, pressing in firmly. Finish with 1 more heaping teaspoon rice, pressing in firmly. Invert trays onto serving dish and remove; sprinkle sushi evenly with sesame seeds, pressing to adhere. Serve with soy sauce on the side for dipping, if using.
