Summer Watermelon Salad
- Preheat grill and prepare pork chops (30 minutes)
- While pork stands, prepare salad; serve (5 minutes)
Honey-Chipotle Pork Chops
Ingredients
- 1 lime, for zest/juice
- ¼ cup honey
- 2 teaspoons chipotle hot sauce
- 4 (1-inch-thick) boneless pork chops (about 2 lb)
- ½ teaspoon kosher salt
- ½ teaspoon pepper
- 1 tablespoon canola oil
Steps
- Preheat grill (or grill pan) on medium-high. Zest lime (1 teaspoon), then juice (2 ½ teaspoons). Whisk lime zest, lime juice, honey, and hot sauce until blended.
- Season pork chops with salt and pepper, then coat with oil (wash hands). Grill 5–6 minutes on each side until 145°F. Baste both sides of pork chops with honey sauce during last 1–2 minutes of grill time.
- Remove pork chops from grill and baste again; let stand 5 minutes to rest. Drizzle remaining sauce over pork chops. Serve.
Summer Watermelon Salad
Ingredients
- ⅓ cup canned mandarin oranges in 100% juice
- 1 cup fresh watermelon chunks
- 1 cup fresh pineapple chunks
- 4 cups chopped romaine lettuce
- 2 tablespoons raspberry vinaigrette
- ¼ cup crumbled feta cheese
- 2 tablespoons shelled sunflower seeds
Steps
- Drain oranges. Cut watermelon and pineapple into bite-size pieces. Place 1 cup romaine on each serving plate.
- Combine oranges, watermelon, and pineapple; divide mixture evenly on top of romaine.
- Drizzle dressing over salads; top evenly with feta and sunflower seeds. Serve.
Serving Suggestions
- Complete your meal with roasted potatoes and chocolate pudding for dessert.
- We used 1-inch-thick pork chops in our testing. The grill time of your pork chops may be affected by the thickness of the meat.
