Ingredients
- ½ lemon, for juice
- 0.75 oz fresh basil
- 1 oz Parmesan cheese
- 2 tablespoons pine nuts
- 1 clove garlic
- ½ teaspoon kosher salt
- ¼ teaspoon pepper
- ½ cup extra-virgin olive oil
Steps
- Juice lemon half (1 tablespoon); remove basil leaves from stems. Grate cheese (2 tablespoons). Place in bowl of food processor: lemon juice, basil leaves, pine nuts, Parmesan, garlic, salt, and pepper; pulse until mixture is smooth puree.
- Pour oil in gradually with machine running; puree until smooth and blended. Add a little water to thin, if necessary. (Makes about ¾ cup.)
