Ingredients

  • ½ lemon, for juice
  • 0.75 oz fresh basil
  • 1 oz Parmesan cheese
  • 2 tablespoons pine nuts
  • 1 clove garlic
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • ½ cup extra-virgin olive oil

Steps

    1. Juice lemon half (1 tablespoon); remove basil leaves from stems. Grate cheese (2 tablespoons). Place in bowl of food processor: lemon juice, basil leaves, pine nuts, Parmesan, garlic, salt, and pepper; pulse until mixture is smooth puree.
    2. Pour oil in gradually with machine running; puree until smooth and blended. Add a little water to thin, if necessary. (Makes about ¾ cup.)
