Ingredients

...For crust
  • Parchment paper
  • 2 refrigerated rolled pie crusts
...For filling
  • 1 cup water
  • ½ cup unsalted butter
  • ½ teaspoon kosher salt
  • 1 cup flour
  • 3 large eggs
...For frosting
  • 2 tablespoons unsalted butter
  • 2 cups powdered sugar
  • 1 ½ teaspoons almond (or vanilla) extract
  • 3 tablespoons milk
...For topping
  • ¾ cup sliced almonds

Steps

    1. Preheat oven to 375°F. Line 2 baking sheets with parchment paper.
    2. Prepare filling. Place water, ½ cup butter, and salt in medium saucepan and bring to a boil. Stir flour into butter mixture; cook and stir 2–3 minutes until dough forms. Transfer dough to large bowl; let stand 3 minutes.
    3. Mix dough with electric mixer on LOW 30 seconds. Add eggs, 1 at a time, continuing to mix on LOW, until eggs are fully incorporated and dough is smooth and glossy.
    4. Roll out pie crusts following package instructions. Place 1 pie crust on each baking sheet; spread dough evenly over crusts. Bake 20–25 minutes until golden and puffed. Remove from oven and let cool completely on baking sheet before squaring off sides, if desired. Meanwhile, set remaining 2 tablespoons butter out to soften. 
    5. Prepare frosting. Beat butter, sugar, and almond extract together with electric mixer until blended and smooth. Add milk (1 tablespoon at a time) until frosting is desired consistency.
    6. Toast almonds, if desired. Spread frosting evenly over filling and sprinkle with almonds. Let stand 10–15 minutes to set, then cut into 30 (3- x 1-inch) bars. Serve.
