Herb-Marinated Feta and Arugula Salad

Ingredients
  • 2 teaspoons white balsamic vinegar
  • 1 teaspoon dried Italian seasoning
  • ¼ cup extra-virgin olive oil
  • 8 oz chunk feta cheese
  • 5 oz arugula or frisée salad greens (4 cups)
  • ⅓ cup pitted kalamata olives
  • 1 tablespoon fresh lemon juice
Steps
  1. Preheat broiler. Combine vinegar and Italian seasoning; add oil slowly, whisking until blended. Cut cheese into four equal pieces; add to oil mixture, turning to coat. Broil 2-3 minutes or until golden and bubbly.
  2. Toss salad greens with remaining oil and vinegar mixture; divide greens between four serving plates. Add cheese to each salad. Cut or tear olives in half; sprinkle over salads. Sprinkle each salad with lemon juice and serve.
