Ingredients
- 2 teaspoons white balsamic vinegar
- 1 teaspoon dried Italian seasoning
- ¼ cup extra-virgin olive oil
- 8 oz chunk feta cheese
- 5 oz arugula or frisée salad greens (4 cups)
- ⅓ cup pitted kalamata olives
- 1 tablespoon fresh lemon juice
Steps
- Preheat broiler. Combine vinegar and Italian seasoning; add oil slowly, whisking until blended. Cut cheese into four equal pieces; add to oil mixture, turning to coat. Broil 2-3 minutes or until golden and bubbly.
- Toss salad greens with remaining oil and vinegar mixture; divide greens between four serving plates. Add cheese to each salad. Cut or tear olives in half; sprinkle over salads. Sprinkle each salad with lemon juice and serve.
