Ham and Brie Sandwiches

Ingredients

  • 4 oz Brie cheese
  • 1 loaf Bakery French (or five-grain) bread
  • ¼ cup extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • ½ cup fig preserves
  • 12 oz sliced cooked ham
  • ½ cup baby arugula

Steps

    1. Remove rind from Brie; cut cheese into ¼-inch-thick slices. Slice bread in half lengthwise, leaving ½ inch intact. Coat cut sides of bread with oil, then season with salt and pepper; toast if desired.
    2. Spread jam inside bread, then layer ham, Brie, and arugula on bottom half of bread. Fold bread closed and cut into 4 equal sandwiches. Serve.
    Chef's Tip: Bake sandwiches at 350°F for 4–5 minutes until cheese is melted and ham is 145°F.
Other Preparation Methods
    • Crostini: Spread garlic-herb butter on top and bottom of French bread slices, then top each with sliced mozzarella and pepperoni. Bake at 400°F until lightly browned and crispy.
