Ingredients
- 1 lemon, for juice
- 1 lb fresh chicken tenderloins
- Cooking spray
- 2 teaspoons salt-free garlic-herb seasoning
- 1 (6 ct) package whole wheat pita pockets
- ½ seedless cucumber
- ¾ cup tzatziki sauce (or dip)
- 2 ¼ cups shredded lettuce
- 6 tablespoons tomato bruschetta (or salsa)
Steps
- Preheat grill (or grill pan) on medium-high. Juice lemon (2 tablespoons). Coat chicken with spray and seasoning (wash hands). Grill chicken 3–4 minutes on each side until grill-marked and 165°F. Remove from grill and drizzle with lemon juice. Let stand 5 minutes to cool.
- Warm pita pockets following package instructions, if desired.
- Slice cucumber (about 1 cup) and chicken into bite-size pieces. Spread 2 tablespoons tzatziki inside each pita, then fill with lettuce, chicken, and cucumbers. Top each with 1 tablespoon bruschetta. Serve.
