Gyro Chicken Pockets

Ingredients

  • 1 lemon, for juice
  • 1 lb fresh chicken tenderloins
  • Cooking spray
  • 2 teaspoons salt-free garlic-herb seasoning
  • 1 (6 ct) package whole wheat pita pockets
  • ½ seedless cucumber
  • ¾ cup tzatziki sauce (or dip)
  • 2 ¼ cups shredded lettuce
  • 6 tablespoons tomato bruschetta (or salsa)

Steps

    1. Preheat grill (or grill pan) on medium-high. Juice lemon (2 tablespoons). Coat chicken with spray and seasoning (wash hands). Grill chicken 3–4 minutes on each side until grill-marked and 165°F. Remove from grill and drizzle with lemon juice. Let stand 5 minutes to cool.
    2. Warm pita pockets following package instructions, if desired.
    3. Slice cucumber (about 1 cup) and chicken into bite-size pieces. Spread 2 tablespoons tzatziki inside each pita, then fill with lettuce, chicken, and cucumbers. Top each with 1 tablespoon bruschetta. Serve.
