Ingredients
- 1 ½ lb ground chicken
- 1 (16-oz) jar mild salsa
- 1 tablespoon taco seasoning
- 1 (9-oz) bag tortilla chips
- 2 cups shredded Mexican-blend cheese
Steps
- Preheat oven to 400°F. Combine in medium bowl: chicken, salsa, and taco seasoning until blended. Place in shallow baking dish; bake 20–25 minutes, until 165°F. Drain and crumble meat.
- Place tortilla chips in baking dish. Top with meat and cheese. Bake 5 minutes until cheese is melted.
Other Preparation Methods
- Sauté: Preheat 1 tablespoon canola oil in large sauté pan, and add 1 ½ lb ground chicken. Cook 5–7 minutes, stirring, until 165°F. Add 12-oz chili sauce and ⅓ cup prediced yellow onions. Cook 5–7 minutes, stirring, until onions soften.
- Grill: Preheat grill. Combine in medium bowl: 1 ½ lb chicken, ½ cup crumbled feta, ¼ cup smoked sundried tomatoes, 1 teaspoon fresh chopped dill, ½ teaspoon Greek seasoning until blended; form into 4 patties. Grill 4–5 minutes on each side and until 165°F.
