Grilled Tuna and Farro-Kale Salad

Ingredients

  • ½ cup farro (or barley)
  • 1 ½ cups vegetable stock (or water)
  • 2 (6-oz) fresh tuna fillets
  • Cooking spray
  • ½ teaspoon Montreal seasoning
  • 4 cups kale salad blend
  • ¼ cup lemon vinaigrette
  • ¼ cup shaved Parmesan cheese

Steps

    1. Combine farro and stock in a medium sauce pot; bring to a simmer and cook 20–30 minutes or until tender. Drain.
    2. Preheat grill. Coat tuna with cooking spray and Montreal seasoning; cook 3–4 minutes on each side or until 145°F. Cut into 1 inch cubes.
    3. Combine salad greens, farro, tuna, and lemon vinaigrette; toss to coat. Top with cheese. Serve.
