Grilled Sausage with Fruit Relish

Ingredients

  • 2 ripe kiwifruit
  • 1 ripe mango
  • 1 ripe carambola (star fruit)
  • 2 tablespoons white balsamic (or white wine) vinegar
  • ⅛ teaspoon kosher salt
  • 2 cups water
  • 1 cup apple juice
  • 4 fully cooked chicken (or turkey) sausage links (about 12 oz)
  • 4 whole grain hot dog buns

Steps

    1. Peel kiwifruit; cut mango sides away from pit. Cut all fruit into very small pieces (about 2 cups) and place in medium bowl. Stir in vinegar and salt; set aside.
    2. Preheat grill (or grill pan) on medium. Combine water, apple juice, and sausage links in medium saucepan; bring to a boil on high. Reduce heat to low; cook 5 minutes or until hot.
    3. Place sausage links on grill and cover. Grill 5–7 minutes until sausages are grill-marked and 165°F.
    4. Place 1 sausage in each bun and top with fruit relish. Serve with any remaining fruit relish on side.
