Ingredients
- 2 lb petite red potatoes
- 1 medium yellow onion
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon kosher salt
- 2 teaspoons ground coriander, divided
- 4 green onions
- 4 links fully cooked smoked chicken sausage
- 4 hard-boiled eggs
- ½ cup mayonnaise
- ¼ teaspoon pepper
- 2 tablespoons chipotle hot sauce
- 2 tablespoons garlic stir-in paste
- 1 tablespoon fresh Italian parsley
Steps
- Preheat grill (or grill pan) on medium-high. Cut potatoes into thirds and yellow onion into ½-inch-thick slices; coat both with oil, salt, and 1 teaspoon coriander. Remove root ends from green onions.
- Place sausages, potatoes, and all onions on grill; cover and cook 5 minutes, turning occasionally. Move potatoes and green onions over indirect heat, then continue to grill sausages, potatoes, and all onions 4–5 more minutes, turning occasionally, until potatoes and onions are tender and sausages are 165°F (green onions should be very charred). Let sausages stand 3 minutes before slicing.
- Slice eggs. Chop yellow onions into bite-size pieces. Chop green onions finely.
- Combine in large bowl: mayonnaise, pepper, hot sauce, garlic paste, green onions, and remaining 1 teaspoon coriander; add potatoes, eggs, and yellow onions and stir to combine. Chop parsley. Serve sausages over potato salad, sprinkled with parsley.
