Grilled Maple-Barbecue Salmon

Ingredients

  • 1 tablespoon brown sugar bourbon seasoning
  • 1 ½ lb salmon, skin removed
  • Cooking spray
  • 2 tablespoons pure maple syrup
  • ¼ cup barbecue sauce

Steps

    1. Preheat grill (or grill pan) on medium. Sprinkle seasoning over salmon and coat with spray. Combine syrup and barbecue sauce; divide sauce in half.
    2. Grill fish 4–5 minutes, turning occasionally, until 145°F. Brush with one-half of sauce during last minute of grill time. Serve with remaining one-half sauce.
    Always check fish for bones and cook to an internal temperature of 145°F.
Other Preparation Methods
    • Bake: Preheat oven to 400°F. Coat 1 ½ lb salmon with 1 tablespoon each olive oil, and blackening seasoning; place on foil-line baking sheet. Bake 12–15 minutes until 145°F.
    • Sauté: Preheat large sauté pan on medium 2–3 minutes. Coat 1 ½ lb salmon with ¼ cup flour and 1 tablespoon salt (shaking off excess). Melt 3 tablespoons unsalted butter in pan; add fish. Cook 3–5 minutes on each side until 145°F. Stir in 2 tablespoons capers and ¼ cup lemon juice during last minute of cook time.
