Ingredients
- ¼ cup extra-virgin olive oil
- 1 tablespoon dried rosemary
- 2 teaspoons dried thyme
- ¼ teaspoon pepper
- ½ teaspoon kosher salt
- 8 (1 ¼-inch-thick) lamb loin chops (about 2 lb)
Steps
- Preheat grill. Combine olive oil and seasonings. Turn chops in oil mixture until well coated.
- Place lamb chops on grill over direct heat; cook 3-4 minutes on each side or until 145°F (for medium-rare).

- Bake: Preheat oven to 400°F.
- Coat 2 lb lamb chops (1 ¼-inch thick) with 1 tablespoon oil; season with 1 teaspoon Italian
- seasoning and ¼ teaspoon each salt and pepper. Place on baking sheet; bake 5-6 minutes on each side or until 145°F.
- Broil: Preheat broiler. Season 2
- lb lamb chops (1 ¼-inch-thick) with 1 teaspoon Mediterranean seasoning. Place lamb on rack in broiler pan; broil 4 minutes on each side or until 145°F.
