Grilled Kentucky Barbecue–Style Pork with Vegetable Skewers

Ingredients
  • 1 lb fresh Brussels sprouts
  • 1 large sweet onion
  • 1 medium yellow (or green) bell pepper
  • 24 oz baby red (or yellow) potatoes
  • 4 tablespoons vegetable oil, divided
  • 6 teaspoons Kentucky-Style Seasoning, divided
  • 8 (12-inch) wooden skewers
  • 1 lb pork tenderloin
  • ⅓ cup Kentucky-Style Dark Barbecue Sauce
Steps
  1. Preheat grill (or grill pan) on medium. Trim and discard tough root ends from sprouts. Cut onion and pepper into 1-inch cubes.
  2. Place sprouts and potatoes in large microwave-safe bowl. Cover and microwave on HIGH 4 minutes; drain well and let stand to cool 5 minutes.
  3. Coat sprouts, potatoes, onions, and peppers with 3 tablespoons oil and 4 teaspoons seasoning. Alternate vegetables evenly onto skewers. Coat pork with remaining 1 tablespoon oil and 2 teaspoons seasoning (wash hands).
  4. Grill vegetable skewers and pork 12–14 minutes, turning occasionally, until vegetables are tender and pork is 145°F. Let pork stand 5 minutes before slicing. Serve pork and vegetables drizzled with sauce.
