Grilled Grouper Sandwich

Ingredients

  • 1 tablespoon blackening seasoning
  • 1 ½ lb grouper fillets (¾-inch thick)
  • ¼ cup mayonnaise
  • 3 tablespoons ranch dressing
  • 4 hoagie rolls
  • Sandwich toppings, such as lettuce, tomato slices, and pickles (optional, for serving)

Steps

    1. Season grouper with blackening seasoning (wash hands). Combine mayonnaise and ranch dressing; set aside.
    2. Preheat grill to medium. Grill fish 4–5 minutes on each side until flesh is opaque and separates easily.
    3. Place grouper and mayonnaise mixture in rolls; top with your favorite sandwich toppings, if desired.
    Always check fish for bones and cook to an internal temperature of 145°F.
Other Preparation Methods
    • Bake: Preheat oven to 400°F.Place 1 ½ lb grouper in oiled baking pan and season with salt/pepper; bake 8–10 minutes or until opaque and separates easily.
    • Pan Fry: Dip 1 ½ lb grouper in beaten egg, then coat with bread crumbs; shake off excess. Preheat 3 tablespoons oil in large sauté pan on medium-high. Cook fish 3–4 minutes on each side and until golden and fish separates easily. Season with salt and pepper.
