Grilled Chicken with Sweet and Sour Berry-Almond Salad

Ingredients

  • 2 teaspoons fresh thyme, divided
  • 1 small red onion
  • 1 seedless cucumber
  • 2 cups mixed fresh berries (such as raspberries, blueberries, and blackberries)
  • ½ cup red wine vinegar
  • ¼ cup honey
  • ½ teaspoon crushed red pepper
  • 1 teaspoon kosher salt, divided
  • 2 chicken fillets (about 1 lb)
  • ½ teaspoon pepper
  • Cooking spray
  • 4 oz mixed baby greens
  • 2 tablespoons slivered almonds
  • 3 tablespoons crumbled goat cheese
  • ½ cup matchstick carrots

Steps

    1. Preheat grill (or grill pan) on medium-high. Chop thyme. Chop onion (½ cup). Cut cucumber into bite-size pieces.
    2. Place in medium saucepan on medium: onions, berries, vinegar, honey, red pepper, 1 teaspoon thyme, and ½ teaspoon salt; cook 3–4 minutes, stirring occasionally, until berries begin to break down. Remove berry dressing from heat and set aside to cool.
    3. Season chicken with pepper and remaining 1 teaspoon thyme and ½ teaspoon salt, then coat with spray (wash hands). Place on grill and cook 8–10 minutes, turning occasionally, until grill-marked and 165°F. Remove from grill and let stand 5 minutes before slicing.
    4. Place in salad bowl: greens, almonds, goat cheese, cucumbers, carrots, and one-half berry dressing; toss to coat. Divide salad mixture among serving plates; top with sliced chicken. Drizzle remaining half dressing over salads; serve.
