Ingredients
- 1 ½ lb GreenWise ground chuck
- 1 (15 oz) GreenWise low-sodium black beans
- 1 (14.5 oz) can GreenWise diced tomatoes
- 1 (1 oz) packet low-sodium taco seasoning
- 1 head GreenWise romaine hearts
- ¼ bunch cilantro
- 1 (9 oz) bag GreenWise tortilla chips
- 1 (6 oz) bag GreenWise shredded Mexican-blend cheese
- 1 cup GreenWise sour cream
- 1 (15.5 oz) jar GreenWise mild salsa
- 1 (8 oz) container Deli guacamole
Steps
- Preheat oven to 400°F. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Coat pan with cooking spray and add meat to pan. Cook and stir 6–8 minutes stirring to crumble meat until meat is 160°F; drain. Meanwhile, drain beans and tomatoes.
- Return beef to heat; stir in taco seasoning, beans, and tomatoes. Cook and stir 3–4 minutes until hot. Shred lettuce and chop cilantro.
- Place tortilla chips in baking dish; top with meat mixture and cheese. Bake 5 minutes or until cheese has melted.
- Top nachos with shredded lettuce, ¼ cup each sour cream, salsa, and guacamole, and cilantro. Serve with remaining condiments.
