Ingredients
- 1 (10-oz) bag frozen sweet corn
- 1 (15.5-oz) can low sodium black beans
- 1 (14.5-oz) can diced tomatoes
- ¼ cup cilantro, chopped
- 1 small jalapeño pepper, chopped
- ½ small sweet onion
- ½ lime, for juice
- ½ teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon ground cumin
- 1 teaspoon granulated sugar
- 1 (8-oz) bag sweet potato tortilla chips (optional)
Steps
- Microwave corn following package instructions; refrigerate to cool. Drain and rinse beans. Drain tomatoes. Chop cilantro, jalapeño, and onion. Squeeze lime for juice (1 tablespoon).
- Place tomatoes, cilantro, jalapeño, onion, lime juice, garlic powder, salt, cumin, and sugar in food processor; blend until smooth.
- Transfer salsa to medium mixing bowl and stir in corn, and beans until blended. Serve with chips (if desired).
