GreenWise Spicy Black Bean and Corn Salsa

Ingredients

  • 1 (10-oz) bag frozen sweet corn
  • 1 (15.5-oz) can low sodium black beans
  • 1 (14.5-oz) can diced tomatoes
  • ¼ cup cilantro, chopped
  • 1 small jalapeño pepper, chopped
  • ½ small sweet onion
  • ½ lime, for juice
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground cumin
  • 1 teaspoon granulated sugar
  • 1 (8-oz) bag sweet potato tortilla chips (optional)

Steps

    1. Microwave corn following package instructions; refrigerate to cool. Drain and rinse beans. Drain tomatoes. Chop cilantro, jalapeño, and onion. Squeeze lime for juice (1 tablespoon).
    2. Place tomatoes, cilantro, jalapeño, onion, lime juice, garlic powder, salt, cumin, and sugar in food processor; blend until smooth.
    3. Transfer salsa to medium mixing bowl and stir in corn, and beans until blended. Serve with chips (if desired).
