Ingredients
- 1 (10-oz) bag frozen GreenWise Quinoa and Squash
- 1 Fuji apple
- ½ cup shredded carrots
- ½ cup lemon vinaigrette
- 1 (3.5-oz) bag GreenWise Salad Toppers, Organic, Dried Cranberries & Glazed Walnut Pieces
- ¼ teaspoon kosher salt
- ¼ teaspoon pepper
- ½ cup crumbled feta cheese
Steps
- Microwave quinoa following package instructions; refrigerate 10 minutes to cool. Core and small dice apple.
- Combine remaining ingredients with quinoa and apple in medium mixing bowl until blended. Serve.
